Easy Potato Bake (also, hello)

I need to start recording my recipes, which are always evolving and my repertoire expanding, so that I may share them with others. So here we are. There's lots more coming, but let's get started.


PER PERSON:
1 large russet potato, cut into bite-sized pieces
Half of a small sweet onion, diced
1 carrot, coarsely grated
1 tablespoon oil
1 teaspoon powdered chicken stock
1 clove of garlic (optional), minced or crushed
1/2 teaspoon basil
dash of oregano


Mix potatoes, onions, carrots, oil, and powdered chicken stock in a casserole dish or similar type of pan. Bake uncovered at 400 degrees for 20 minutes. Remove from oven and stir well to prevent stuff burning onto the sides, then place back in the oven for another 20 minutes or until done. Remove from oven, mix in garlic, basil, oregano, and salt and pepper to taste. Serve immediately.

Makes a light meal, or a full meal if served with something else.
